When we go to the region's fab suppliers for advice to bring you the most informative features we can, we often get so much brilliant wisdom, that we can't fit it all in! So, not wanting to deprive you of some tip top tips, we'll be bringing you our catering feature – extra – over the next few weeks with an in depth look into what to serve on your big day. TO CANAPE OR NOT TO CANAPE 
"Couples can sometimes underestimate the amount of time photos after the ceremony can take and guests who aren’t a part of this can often be waiting around for over an hour. Canapés are a great way to keep them entertained during this part of the day. By Ambience offer a vast range of flavours and styles in our canapés menu that include meat, fish and vegetarian options as well as dessert canapés. Our favourites are roast Sussex beef, mini Yorkshire pudding and creamed horseradish, nori with either fresh tuna and pickled ginger or smoked salmon served, of course, with wasabi and roasted red bell pepper and mozzarella arancini ball to name just a few!
 
A MILESTONE MENU FOR THE MR & MRS
"2019 has seen a lot of emerging trends in the food industry. We have found that couples are being a lot more conscious about where their food is sourced from, how it's grown and also how it's served. Couples are really keen to get guests engaging with the food and we find ‘family service’ is a great way to do this, side dishes such as vegetables, breads or salads are served in the centre of the table meaning guests have a talking point and speak to each other, allowing them to break the ice comfortably and get conversation flowing naturally. This also works well for couples looking at a barbecue wedding breakfast but still wanting the traditional seating style of a formal wedding breakfast. 

"We provide sample menus to couples as a guidance for ideas, but we love when a couple comes to us with their owns thoughts on their food too! After all, we got into this business because we love to cook – we can recreate a family recipe just for your special day!
 
OWN THE NIGHT
"You can’t forget about the evening guests; they’ll need feeding too! For a relaxed festival style wedding, a hog roast or rotisserie is a great centrepiece for guests to remember. By Ambience can provide all the trimmings needed for your guests to create their perfect personalised portion of piggy! This season, we’re also loving the rise in mezze and sharing platters! After such an amazing but busy day, our couples and their guests have loved sitting down to a board full of local cheeses, meats, olives and peppers served with fresh breads and dipping oils. 

"For something more substantial, bowl food is a great option. These are wholesome, hearty meals in smaller servings, perfect for mingling guests to carry around as they discuss the happy couple and their amazing wedding day. Our favourites are slow cooked spiced lamb tagine with couscous, salmon, prawn and mussel paella and Thai green vegetable curry with steamed rice."
