East Sussex wine estate Everflyht has released its debut wines

East Sussex wine estate Everflyht has recently released its debut wines, the Brut Sparkling NV (£28) and Sparkling Rosé de Saignée 2019 (£40). The former is a blend of pino noir and chardonnay, with a small percentage of pinto meunier bringing structure and complexity. A portion of the blend has spent time in old and new oak, with 20 per cent of the blend made up of Everflyht’s reserve wine. Meanwhile, the Rosé de Saignée 2019 is a blend of 60 per cent pino noir and 40 per cent pinor meunier and made in a fruit-forward style with a portion of the blend matured on lees in old oak barrels for added depth and character. Both make for a delightful glass of bubbly to toast your big day with.

Owners Sam and Ben Ellis play a hands-on role with the viticulture and winemaking, working closely with general manager Luke Spalding. Sam says, “We wanted to make our own unique style of premium English sparkling wine, with plenty of fruit, flavour and individuality. We’re so excited that this Christmas we’ll finally be able to enjoy our own wines with friends and family!”
